Situated in the foothills of the Pyrenees, surrounded by its vineyards, Domaine Gayda is a new destination in the Languedoc, 25km south west of Carcassonne, in the village of Brugairolles.
Owners Tim Ford and Anthony Record have joined forces with winemaker Vincent Chansault and the restaurant team to create the new face of wine and cuisine for the region.
The new winery was built in 2004 and the restaurant on its upper floor in 2006, providing fine dining with spectacular, uninterrupted views of the Pyrenees Mountains.
Domaine Gayda has a passion for the traditional ‘cépages’ grown across the many diverse soils and climates of our vineyards situated throughout the Languedoc, giving “Provenance” to all our wines. While the grapes are rooted in tradition, the winery itself is all about the new, with investments in all the latest equipment and technology.
Our quest towards an organic viticulture is driven by our respect for the natural environment and to offer a wine of outstanding quality.
In the largest wine region of the world, Domaine Gayda strives to create wine with provenance and a sense of “being” that is a true reflection of the quality and diversity of the Languedoc Roussillon.
Domaine Gayda is a fully organic vineyard with certification for our Figure Libre range complete by 2012. The other wines will follow as we continue to fulfil the necessary requirements.
The yields are naturally low due to the age of the vines and to the nature of the “terroir” providing great balance in the grapes. With respect to the vines only natural products are used during the growing period seeking a natural balance and increased biodiversity. All the grapes are handpicked in small 20kg crates and taken to the cellar in refrigerated containers providing maximum protection to ensure perfect condition on arrival.
The new cellar, completed in time for the 2004 vintage, is state-of-the-art to provide the utmost care for the quality of the grapes. Even though the equipment is of the latest technology, the process is very traditional with the meticulous grading of the grapes and berries and the slow filling of the tanks by gravity. All operations are done by hand and every batch vinified separately to let them express their individual character. Each process is monitored by feel and taste; not by computer. The wines are then aged in French Oak between 9 months and 2 years.
