Sélection Parcellaire combines a vintage, a terroir, a variety and a vineyard with ideas and trials in the winery in order to create the character and personality of the wine. Our laboratory of taste!
For the 2017 vintage, we have chosen the Mourvèdre from the limestone terroir of La Livinière. A rigorous selection takes place during the harvest. Vinification is with whole-bunch grapes, pressed by foot, and without sulphites. This technique allows the grape variety to express its full aromatic potential and gentle extraction of tannins. A balancing act!

Hand picking in small crates
Natural vinification without sulphites in wooden tank barrel
Pressing of whole bunches by foot
Punchdown
4 weeks on the skins before pressing
Bottled at the Domaine

Mourvèdre vines amongst the fruit trees in La Combe Basse vineyards at La Livinière.

Ageing 15 months in wooden tank barrel
